Agave: 100% Agave tequilana weber var. azul
Region: Los Altos de Jalisco (from their own ranches)
Cut and Selection: Cut with coa, with 6-8 years of maturation
Cook: Slow cooked with steam in traditional brick ovens for 24 hours
Fermentation: Fermented without fibers in stainless steel tanks with a rum yeast. Minimum of 96 hours with the soothing sound of classical music
Distillation: Double distilled in copper pot stills

Tasting Notes: A natural and easy-going blanco with notes of sweet cooked agave, minerals, and a touch of vanilla. Excellent quality for a cocktail base or a solid budget sipper.

Aging: Blend 70% blanco and 30% reposado. The reposado is aged at a high ABV for two months in pipones (large oak barrels)

Tasting Notes: The addition of reposado rounds out the back end of the profile, giving us a kiss of those familiar barrel notes: nuttiness, honey and caramel to marry with the sweet cooked agave and soft pepper notes of the blanco.
